I really do love to eat eggs. Even the news that too much of it isn’t good for you does not deter me from eating it. What are they talking about any way? I know, I know, the cholesterol thing. But you know, I don’t really worry about that when I’m enjoying my egg and I don’t eat it too often anyway.

I like them boiled, fried, steamed/pouched, and scrambled. My mood often depicts the type of egg I’m going to have. Or maybe that should be the mood of my taste bud!

When I was pregnant I loved eating sardines and egg. Yep, sardines and egg, whether it be scrambled or fried or even an omelet. It was just very tasty to me and I craved it a lot! When I tell my oldest that’s what I loved to eat when I was pregnant with her she gives a big disgusted yuck! As if I’m from another world or something, LOL! (just wait til it’s her turn – when she’s married…!)

I like preparing omelets but sometimes they just don’t turn out to well. There is an art to cooking it you know. It has to be just right before you turn the one side over and then you don’t want to burn it. I hate when it’s burned. I’ve thrown out a whole omelet more than once just because I burn it! I put everything in it when I make it, tomatoes, cheese, scallions, (green onions), yellow onions, black pepper, garlic, and lots more variety of pepper and spices. Yummy!

I’ve learned that if I use a very small frying pan, my omelet will come out perfectly. Even my fried eggs!

This is the way I like my other eggs:

Boiled egg – Not too hard and not too soft, just with a slightly soft yolk. If it’s too runny I won’t eat it.

Fried egg – I like these the same way too. Not sunny side up – too runny, just slightly soft.

Scrambled – I usually prepare this with a little milk, salt to taste and lots of black pepper. It has to be fully cooked and not burnt.

Have you ever eaten rice with scrambled eggs? That’s delicious too. A basic fried egg sandwich with a slice of tomato and a few sprigs of lettuce is out of this world! And let me not forget the egg salad. I like to make this and put it in the refridgerator so we can have it as snack. I find that using more herbs get rid of the "eggy" smell! And gives it a delicious taste!

How do you like your eggs?

No I haven't. What's chorizo?

Devilled!

I forgot about devilled eggs! I've tried it at work before but I've never cooked it that way. Thanks for the recipe I'm gonna try it!

btw-- i got your jerk recipe, gonna try it as soon as i can find some scotch bonnet peppers!

Great! I just got back to my email earlier and Tex told me! If you can't find the scotch bonnet (which will give it the authentic fiery taste) use jalepeno pepper (the really hot variety).

Hmmm... I like a recipe that I picked up in Germany.

We call if Farmer's breakfast.

Home fried potatos (cube and fried in a skillet, drained when done)
bell peppers (chopped and sauteed)
onions (Vidalia preferrably and chopped and suateed)
bacon (cooked)
sausage (cooked, optional).
eggs ...
grated cheddar cheese

Cook the potatoes, peppers, onions, bacon and sausage as indicated.

After the potatoes are cooked, drain and place back in the skillet.

Scramble your egges (in a seperate bowl) and then mix the bacon, sausage, onions and peppers into the scrambled egg mixture. Pour this mixture over the potatoes.

Cook long enough for the eggs to cook throughly. Stir regularly.

Top w/ grated cheddar cheese. Serve.

Love that stuff.

LW - I think I saw some out at the Chesterfield Berry Farm this past weekend. It's out on Hull Street (way past the Chesterfield Zoo). Reasonably priced

No I haven't. What's chorizo?

A mexican sausage.  It crumbles so that it can be sauteed with the eggs (versus the Colombian kind that is more like a wurst and does not crumble as I found out the hard way).  Very spicy (not hot), and gives a real tang when you mix it with scrambled eggs.  I am hooked as is my son (he only had it once before coming back to the east coast, but now most stores do carry it).
