Hmmmm, I'm smelling my delicious rice I have cooking right now. My favourite type of rice to cook on Sundays is Rice and Peas, some culture call it something else. For Jamaicans it's Rice and Peas and we make it with any type of peas; red, black, pink, gungu ( I think that has another name you might recognize but I can't remember it right now) or black-eyed.

You add a little coconut milk, it comes in the tin (or can as you guys say) and you only need to use a tad of it, too much means too sweet rice.

Add salt, black pepper, garlic, thyme and escallion, and a dab of butter

Of course the water should already be in it and you put everything to boil.

When the water is dried out, you turn the fire down a smidge so as not to burn the rice and leave to simmer

Five or ten minutes later, you stir the rice and do what we call the 'mix up' so that the ingredients are blended in even more and your rice should be 'fluffy' if you do it this way. If its wet and a little soppy, don't despair, just put less water next time!

So Rice and Peas, and a chicken roast, made with lots of herbs and seasonings - yummy!



Then some vegetables on the side, I like to use the frozen bags if I don't get the fresh ones. Around here if you don't get to the big W on the day the fresh veggies come in you're out of luck. Traveling to the green market is a distance away so I usually go for the frozen veggies.

I will also make a bowl of green salad, that's lettuce, slices of tomatoes, strips of green pepper, slices of cucumber and strips of carrots. If I had some orange or tangerine it would be a traditional tropical salad!


Yummy, can't wait to eat. I promised to take the kids to the 'big' park today which I'll do before we eat dinner though.

I'm having my own homemade chili,  don't know what my son is having as he doesn't like my version  ...

Your salad sounds so good,  especially if it goes tropical!  the rest sounds delectable!   where do you live?

Orlando! It's very sunny out now. In fact I have to pull myself away now because my daughter is reminding me about my promise! So I'll check back in later. Off to the park we go!

However, tonight we had chicken and dumplings with focaccia bread. They all sound so comforting. Yummmmmmmmmyyyyyy

Next time set some extra plates for us Donna!

I love dumplins! And I'm crazy for focaccia bread! We had Chinese food last night and the dumplins that came with the Waton soup were to die for! We were fighting over who got the last one! It was split three ways, two opt out! They couldn't eat anymore!! We recently discovered a wonderful NY style Chinese place here.
