It's almost TGIF, my favorite time of the week! I missed story time with my five year old and am feeling a bit guilty. She gave me the book, I was doing something, "real quick" I said, and by the time I got to my room, where she loves to fall asleep in my bed, she was snoring away! Now I have to lift her up and lay her in her bed..soon.
I'm sitting here, trying to read a couple of blogs and watch this new show on ABC "BigShots"...what a tangled web they weave! It looks interesting. I just like a couple of the people in it that's why I'm watching it.
Earlier this evening dinner became one of those accidental menu mishaps! My hubby started to cook, he cut up chicken for the oven. Then I realised that there's no rice but there's macaroni and cheese. That didn't seem to be enough because we both carry lunch to work and I also take lunch for a co-worker of mine who loves our cooking. I had some Lasagna in the pantry but no pasta sauce or meat or cheese. He decided to cut up some of the chicken into pieces, boneless for me to do something with. I was ready to experiment but my son wasn't having that!lol! He wanted the real thing with tomato sauce not ketchup sauce!lol!
So while my hubby ran out to get cheese, sauce and ground beef, I put the chicken in the oven to bake, started on the macaroni and cheese then decided to jerk the boneless chicken pieces. And if you know anything about jerk meats, this was going to be HOT!
I put the lasagna noodles to boil, just for a bit I said, so that I wouldn't have to cook them in the oven too long. Then I turned off the stove and let them steep in the warm water. Big mistake! By the time my hubby came back, and he took longer than I thought he would, the noodles were looking a bit soggy! I drained it and left them while I cooked the ground beef, added the sauce, season the way we liked it (lots of garlic, black pepper and other seasonings) and then began the task of creating whatever the results of my soggy noodles will be! I managed to get a couple of good pieces on the bottom, layered with cheese, sauce, etc. Then on top, I toss the split, loose noodles, piled high, layered some more sauce then put the rest of the cheese. My son with his finicky self didn't like how it looked. I told him this is where the magic begins, wait til it's done!
Well, at the end of the baking in the oven came out Lasagna casserole! That's what my son named it and he loved it so much he came back for seconds and thirds!lol! Sorry, no picture...but it was good!
